Our Charolais
Here at Nicolstoke Farm we have been breeding Charolais cattle for over five years. We limit the number of Charolais we have and brought them onto the farm for their popularity in showing, their very calm temperament, and to cross with our Salers to create a beautiful chocolate-coloured calf that is born slightly smaller but is very well-tempered and matures quickly for the commercial meat market. Charolais are a large cattle breed that, with their stark white colour, can be quite a stunning sight in the pasture. Despite their size, they are often very gentle, this is particular for the bulls we have bred. At present we have two cows (Annie & Baby Q), two heifer calfs (Una & Evie), and an August 2021 born bull (Stefan, for sale).

About Charolais
Charolais cattle are a large European breed of cattle, and are one of the oldest standardised cattle breeds coming out of France. The breed originated in the Charolles district in central France. The breed was also one of the first European breeds to be introduced into Australia in 1969. They are known for being a long, late maturing, and incredibly well-muscled heavy breed of cattle with cows being up to 1200kg and some bulls growing to 1650kg. Within Australia a slightly smaller sized animal is generally seen, though they are still considered one of the larger beef producing breeds. Charolais are incredibly docile and make for fantastic show animals with their commanding presence, powerful muscular features, and stunning white, cream, and straw colour. Interesting fact, if you're trying to make an authentic beef bourguignon you should be using Charolais beef.
